Get to Know our SRH Staff: Fernando Tranquilino, Dietary

What is your role at the hospital?
I work in the Dietary department where I aim to make everyone happy. Who isn't happy when they are eating good food? I arrive at the hospital before dawn to get the day started by prepping everything for that day's menu. I cook breakfast and lunch at The Crayon Cafe.

What do you enjoy most about Scottish Rite Hospital?
I enjoy being part of the hospital family because of what it stands for - giving children back their childhood. In my case, all it takes is to make a parent or patient smile as they receive their breakfast - especially pancakes. Those always make people smile!

What was your first job? What path did you take to get here? How long have you worked here?
My first job was at a retirement home as a server. It was there that I became interested in cooking and followed my path to culinary school. I completed my culinary degree and had my first cooking internship at Disney World. I started at the hospital in March 2016, thanks to Betty Harris.

What's the coolest thing you are working on right now?
My wife and I have a taco catering business and we are busy creating our brand. This has kept us busy all year!

What are you currently watching on Netflix?
I am a foodie! Even when it comes to TV - I love to watch shows about food. I recommend Taco Chronicles, Street Food, Chef's Table and All American

Who would you most like to swap places with for a day?
Either The Rock (Dwayne Johnson) or my 3-year-old daughter, Lexxie.

What is a fun or interesting fact about your hometown?
The most interesting thing about Dallas? The food industry is growing, the skyline is amazing and most importantly, it is the home of America's team - the Dallas Cowboys.

What is your favorite thing to do when you’re not working?
There are two things that I always do when I am not at work.
  1. Spend time with family. Family is everything.
  2. Work out because health matters!
